Also, just as a follow up to the topic of naskh and the relevance of the prohibition of alcohol--to clarify, ayat 67 in surat An Nahl, the subtle disapproval is because there is no positive attribute ascribed to "sakaran"?
Also, what of the verses where Allah SWT speaks of wine in Janna? Or would this be an example of something that is mutashabih?

Yes, the subtle hint towards its forthcoming disapproval is because "sakaran" is not ascribed any positive attribute.
In regards to "khamr" in al-Janna, yes it is mutashabih in that we will not now the full extent of its reality until we reach there (May Allah make us from the people of Janna, Ameen), just as all other matters relating to al-Akhira.
However, wine in Paradise is unlike wine in this world, in that Allah strips the wine of all of its harmful qualities that are contained in this world. Thus, the Mumin will not suffer from hangovers, will not become intoxicated and lose his senses, and will not suffer other bodily harms from wine as he does in this world. It will be enjoyed for its taste without the negative "side effects". Please see Qur'an 56-17-19 & 52:23
